Smoked Shish Tawook for Restaurants: Charcoal Aroma, No Charcoal Fire

Al Laith smoked shish tawook seasoning is a ready powder for restaurants that puts the smoky taste inside the marinade, so skewers come out smelling of charcoal even on a gas or electric grill. Customers ask for smoked shish by name, but not every kitchen can keep a charcoal fire going all day. This guide covers what it is, the exact ratios and who gets the most from it.

What is smoked shish tawook?

Classic shish tawook is cubed chicken breast marinated in oil, garlic, lemon, vinegar and spices, grilled on skewers. The smoked version adds a clear charcoal aroma. Smoked shish tawook seasoning carries that smoky taste inside the powder, so it goes into the meat during marinating and shows on any grill.

Ratios from the product page

  • 50 kg chicken: 1.390 kg seasoning + 4–5 kg sunflower oil + 200 g crushed garlic + 2 sliced lemons + 200 g white vinegar.
  • 25 kg chicken: 695 g seasoning + 2–2.5 kg oil + 100 g garlic + 1 sliced lemon + 100 g vinegar.
  • 5 kg chicken: 140 g seasoning + 0.4–0.5 kg oil + 20 g garlic + 2 lemon slices + 20 g vinegar.

Mix everything into the oil, add the chicken, refrigerate for 24 hours and turn 3 times. Do not leave cooked skewers on the grill: the smoke is already in the marinade and extra grilling dries the breast. Cook chicken to 74 °C at the centre.

If the breasts smell heavy, soak them first in off-flavor neutralizer solution (boneless: 10 minutes maximum), rinse with filtered water and marinate.

Who uses it?

  • Mall food courts, where charcoal is often not allowed.
  • Cloud kitchens selling grills for delivery from electric grills.
  • Grill restaurants adding a smoked option next to the classic.
  • Restaurant chains that want the same charcoal aroma in every branch.

List it as its own item, “smoked shish”, next to the classic made with shish tawook seasoning; same method, same ratios. The ready pack is EGP 415 for the 1.390 kg ready-dose pack (50 kg of chicken), before sales tax; also in 1 kg and 5 kg packs and 15 and 25 kg bags.
