One solution, different soak times
The base never changes: 1 kg of off-flavor neutralizer with 10–12 L of water, enough for 50 kg of chicken. Then rinse with filtered water and marinate as usual.
- Broasted, crispy and zinger (bone-in): 1 hour, stirring twice, then broasted seasoning.
- Chicken shawarma (boneless): 10 minutes maximum, then chicken shawarma seasoning.
- Shish tawook cubes: 10 minutes only.
- Whole charcoal and rotisserie chickens: 1 hour, rinse inside and out, then charcoal chicken seasoning.
- Wings and thighs: 1 hour.
- Pané and strips: 10 minutes maximum.
- Chicken boiled for rice or soup: soak before boiling, by cut.
Why the smell shows more in some dishes
The off-odour usually comes from leftover blood, fat and skin, and from the bits that stay stuck inside the ribs; it gets worse when chicken is stored or thawed badly. Bone-in, skin-on pieces such as broasted portions and whole birds carry more of it, so they get the full hour. Boneless breasts carry less but absorb the solution faster, so they get 10 minutes at most.
Making it part of the daily routine
Make soaking a fixed station before the marinating station: a dedicated tub with the ratio and soak time per dish written on it, a timer for boneless cuts, and the bone-in batches started first thing in the shift. Mix only the solution you need, 1 kg with 10–12 L of water per 50 kg, so none is wasted.
Mistakes that bring the smell back
- Thawing frozen chicken on the counter instead of in the fridge.
- Skipping the rinse, so the seasoning does not stick.
- Adding more spice to cover the smell instead of removing it.
- Leaving blood, fat and the bits inside the ribs before soaking.
The neutralizer is for chicken only: breasts, thighs, wings and whole birds. It costs EGP 275 per kg at Al Laith, before sales tax, in 1 kg and 5 kg packs and 15 and 25 kg bags, delivered to every governorate. Half a kilo with 5–6 L of water covers 25 kg of chicken.
