How much ready yolk does 1 kg make?
- 1 kg egg yolk powder + 3 to 3.5 litres of water = 4 to 4.5 kg of whisked yolk.
- A large yolk weighs about 17 to 20 g, so one kilo of powder equals roughly 200 to 260 yolks.
