What is the best egg powder in Egypt for restaurants?

The short answer: the best egg powder passes four tests — the right type for your recipe, a written reconstitution ratio, full dissolving without lumps, and a published price per kilo you can turn into a cost per kilo of liquid egg. If a supplier says "ours is the best" without these numbers, ask for them before you order.

1. Pick the type your recipe needs

  • Whole egg powder: yolk and white together, for toumia, omelettes, pancakes, cakes, doughs and biscuits.
  • Egg white powder: white only, for meringue, ras el abd, nougat, kojak and toumia.
  • Egg yolk powder: yolk only, for mayonnaise, toumia, sauces and custard.

2. Ask how much liquid egg one kilo makes

  • 1 kg whole egg powder + 3 to 3.5 kg water = 4 to 4.5 kg beaten egg (about 80 to 90 large eggs).
  • 1 kg egg white powder + 7 L water = 8 kg liquid egg white.
  • 1 kg egg yolk powder + 3 to 3.5 L water = 4 to 4.5 kg beaten yolk.

Divide the price per kilo by the kilos of liquid egg it makes: a kilo of beaten whole egg costs about a quarter of the powder's price per kilo, and a kilo of liquid white an eighth. Compare that number between suppliers, not the bag price.

3. Test dissolving, colour and smell

  • It should dissolve fully at the written ratio, with a smooth texture.
  • One even colour, no dark spots, no hard lumps (lumps usually mean it took on moisture).
  • A light, natural egg smell; a sealed pack with the expiry date.

4. Compare what comes with the price

Al Laith supplies 1 kg and 5 kg packs and 15 and 25 kg bags; free delivery inside Cairo, and for other governorates the courier's fee is confirmed when you order. Every price is on the Al Laith price list, and every product page has its usage written out.
