Why are there two prices?
There are two grades of egg white powder. Both reconstitute with water at the same ratio; the higher-priced one is the top grade of the line. The right grade depends on the job — toumia, meringue or buffet omelettes — so tell us on WhatsApp what you use it for and how much, and the Al Laith team will recommend one.
How much liquid egg white does 1 kg make?
- 1 kg egg white powder + 7 L water = 8 kg liquid egg white.
- A large egg white weighs about 30–33 g, so one kilo of powder equals roughly 240–265 egg whites.
- Stir the powder gently into the water until fully dissolved, so it does not foam before whipping, then use it like fresh egg white.
What affects the cost besides the price per kg?
- Waste: no leftover yolks, broken eggs or shells — you weigh only what you need.
- Storage: keep it dry, away from sunlight, with no fridge before mixing; it takes far less space than egg trays. Close the pack well after opening, because the powder absorbs moisture.
- Consistency: measured in grams, so meringue and toumia come out the same on every shift.

Toumia in shawarma and broasted shops; meringue, ras el abd, white nougat, kojak, macarons and royal icing at pastry shops; pavlova, mousse and egg-white omelettes in hotel kitchens.
