Why a hotel kitchen needs egg white powder
Hotel kitchens cook in volume all day: breakfast buffet, room service, pastry and banquets. When you need only whites, you crack hundreds of eggs, separate them and then find a use for the yolks. Egg white powder, also called egg albumen powder, lets you make exactly the white you need with no cracking, separating or waste.
The numbers a kitchen manager needs
- 1 kg egg white powder + 7 L water = 8 kg liquid egg white.
- Scaled: 125 g powder + 875 ml water = 1 kg liquid white.
- A large egg white weighs about 30–33 g, so 1 kg of powder equals roughly 240–265 whites.
- Stir gently until fully dissolved so it does not foam before use.
At the breakfast buffet
Egg-white omelettes and scrambled whites are common requests at the egg station. Make the liquid white at 1 kg + 7 L water and cook it exactly like fresh white, preparing only what the buffet needs. For whole-egg omelettes, whole egg powder gives 4–4.5 kg beaten egg from 1 kg with 3–3.5 kg water.
In pastry
- Meringue and pavlova: it whips into a stable meringue.
- Mousse and light creams.
- Macarons: egg-white meringue with almond flour and sugar.
- Swiss meringue buttercream: whites and sugar over simmering water to about 70°C, whipped, then butter added piece by piece; keep cakes chilled above about 27°C.
- Royal icing for cakes and biscuits.
Whipping it right
- Reconstitute at the right ratio and stir gently.
- Use a clean, dry glass or steel bowl; plastic holds grease.
- Keep any yolk or fat out, since fat stops the whites whipping well.
- Whip to stiff peaks, then add sugar gradually.
Storage and packs
The powder is stored dry, away from sun, without refrigeration before mixing, and takes far less space than egg trays; keep the pack tightly closed because it absorbs moisture. Available in 1 kg and 5 kg packs and 15 and 25 kg bags, delivered across Egypt. See also products for hotel and catering kitchens.
