Same origin, different daily work
Egg white powder is not a substitute ingredient: it is egg white without the water. Rehydrated at the right ratio, it whips, sets and binds like fresh white. The difference is in the daily work.
Quick comparison
| Point | Egg white powder | Fresh egg white |
|---|---|---|
| Prep | 1 kg powder + 7 L water = 8 kg liquid white | Crack and separate each egg |
| Yolks | No leftover yolks | Yolks to use elsewhere or discard |
| Storage | Dry place, no fridge before mixing | Refrigerated, egg cartons take space |
| Quantity | Make exactly what you need, by the gram | Tied to egg count and size |
Whipping
Both whip into a stable meringue in a clean, dry, grease-free bowl. With fresh eggs, a drop of yolk while separating can stop the whites from whipping; with powder that risk is gone. Stir the powder gently into the water so it does not foam before whipping.
Binding
In kofta, burgers and fish fingers it helps pieces hold together on the grill and stay juicy. Rehydrate first (1 kg to 7 L), then add to the mix.
Yield
1 kg makes 8 kg of liquid white. A large egg white is about 30 to 33 g, so a kilo equals roughly 240 to 265 whites. For small batches: 125 g powder + 875 ml water = 1 kg liquid white.
When to choose which
- Powder: large daily use (ras el abd, nougat, kojak, kofta binding, hotel egg-white omelettes), little fridge space, cost by the gram.
- Fresh: very small use with a same-day use for the yolks.
