The powder is rarely the problem
Most complaints come from reconstitution or equipment. Reconstituted correctly, Egg White Powder whips, sets and binds like fresh egg white. The ratio is fixed: 1 kg powder + 7 L water = 8 kg liquid egg white.
Why egg white powder is not whipping: 7 causes
- Grease in the bowl or whisk. Any trace of oil, butter or yolk stops a stable foam. Use a clean, completely dry bowl.
- Stirring too hard while reconstituting. Stir the powder gently into the water until fully dissolved, and let it rest a little before whipping so it rehydrates fully.
- Wrong water ratio. Weigh it: seven times the powder's weight in water.
- Powder that absorbed moisture. Keep the pack closed in a dry place; never put a wet scoop in the sack.
- Under- or over-whipping. Stop at stiff peaks; beyond that the foam turns grainy and weeps.
- All the sugar at once. In meringue, add sugar gradually once the foam has started.
- Preparing too much. Reconstituted white behaves like fresh white, so prepare only what the shift needs.
Beyond desserts
- Binding kofta, burgers and fish fingers: reconstitute first rather than sprinkling dry powder. If kofta falls off the skewer, the Burger & kofta binder mix is made for that.
- Coating before breadcrumbs or frying: keep the layer thin and even.
- Baking: when a recipe needs whole egg, use Whole Egg Powder.
Why large kitchens still prefer powder
Once the method is right, results are the same every time: no cracking, no separating, no leftover yolks, storage without refrigeration before mixing, and recipe costs calculated by the gram. Al Laith supplies it in 1 kg packs and 15 and 25 kg sacks.
Frequently asked questions
Why is my egg white powder not whipping?
Usually grease in the bowl or whisk, or the wrong water ratio. Use a clean, dry bowl and reconstitute 1 kg powder with 7 L water.
How do I reconstitute egg white powder without lumps?
Stir it gently into the water until fully dissolved, let it rest briefly, and keep the pack closed because the powder absorbs moisture.
Can I make meringue with egg white powder?
Yes. It whips into a stable meringue as long as the bowl is grease-free and sugar is added gradually.
