How to Use Egg Yolk Powder in a Restaurant, Step by Step

Egg yolk powder is dried hen's egg yolk in golden powder form, used by restaurants, shawarma shops, cafés and bakeries instead of cracking eggs and separating yolks every day. This guide shows how to use egg yolk powder step by step: rehydrating it without lumps, working out quantities, using it in mayonnaise, toumia and custard, and storing it correctly.

The one ratio to remember

Everything starts with one ratio: 1 kg powder + 3–3.5 L water = 4–4.5 kg beaten yolk. It is the ratio for Al Laith egg yolk powder, and every smaller or bigger batch is calculated from it. A large yolk weighs about 17–20 g, so 1 kg of powder equals roughly 200–260 yolks once rehydrated.

How to rehydrate egg yolk powder

  1. Weigh the powder and the water on a scale.
  2. Make a paste with the powder and about a quarter of the water.
  3. Add the rest of the water gradually while whisking until smooth.
  4. Rest it about 10 minutes so the powder absorbs the water.
  5. Use it like fresh yolk, by the same weight.

Mayonnaise, toumia and more

Yolk is naturally rich in lecithin, which holds oil and water together, so mayonnaise made with egg yolk powder stays stable. In the restaurants we supply, toumia made with egg powder does not split on the grill next to the shawarma and keeps 6 days in the fridge instead of about 3 with fresh eggs. To turn that mayonnaise into burger sauce, add mayonnaise seasoning at 5 g per 100 g. The yolk also works in creamy sauces, custard, cream fillings and golden doughs; for recipes that need the whole egg, use whole egg powder.

Storage

The powder keeps at room temperature in a dry place away from sunlight; after opening, move it to an airtight box. Once rehydrated, treat it like fresh yolk and use it the same day, and keep any mayonnaise or toumia in the fridge until served. Packs: 1 kg and 5 kg packs and 15 and 25 kg bags, with delivery to every governorate.
