Six common causes
- Too much water in the meat. Frozen and thawed meat is wet and makes soft kofta; drain it well first.
- Wrong fat level. Very lean meat dries and crumbles; very fatty meat melts and drops. Fat keeps kofta juicy, so the binder dose follows the fat level.
- Not enough kneading. Knead until the mix is one cohesive mass.
- Weak shaping. Wide skewers hold better; press the meat up the skewer to an even thickness.
- Turning too early. Let the surface set before turning.
- No binder. A binder holds water and juices inside the mince, so kofta stays on the skewer until cooked and burgers stay juicy, close to their raw size.
The right dose
Burger & kofta binder mix is dosed by fat level:
| Fat | Binder per 1 kg | Water |
|---|---|---|
| 20% | 40 g | 5 g |
| More than 20% | more binder | — |
| 30% | 50–55 g | none |
For chicken, if fat exceeds 20% of the white meat, raise the binder accordingly.
Kitchen steps
- Weigh the mince and estimate its fat.
- Weigh binder and water from the table, add Kofta seasoning or Beef burger seasoning.
- Knead well before shaping so binding is even, then shape and grill.
Weight loss: the number that matters at month end
Every kilo of meat loses weight on the fire as water and juices escape, and the restaurant pays for meat that never reaches the plate. According to industry data, the right binder can cut cooking loss by more than 10%, so the same meat yields more skewers and patties. Keep the method fixed between shifts: post the binder and water dose by meat type next to the scale, adjust when the fat level of your supply changes, and grill one test skewer before shaping the whole batch.
Burgers shrinking? Same fix
Burgers shrink when juices escape fast; holding them inside means less shrinkage and less weight loss. Some kitchens bind with Egg White Powder, but with high-fat mince the binder suits better because its dose follows the fat level. Available in 1 kg packs and 15 and 25 kg sacks.
Frequently asked questions
How do I keep kofta on the skewer?
Use 40 g binder and 5 g water per kg of 20% fat mince, more binder for higher fat, knead well and don't turn before the surface sets.
How much binder for 30% fat?
50–55 g binder per kg, no water.
Why do burgers shrink on the griddle?
Juices escape quickly during cooking. A binder holds them in, so the patty shrinks less and stays juicy.
