Why zinger meals sell

A zinger is a chicken breast fillet in a spicy marinade, coated and fried until crisp, usually served in a sandwich. Customers order it for the heat and the crunch. For a restaurant owner the big advantage is that one marinated fillet can be served in several ways, so you add menu items without adding stock or work for the chef. What matters is that every piece tastes the same on every shift — that is the job of a ready marinade.

The base marinade

Every dish below starts with the ratios on the zinger seasoning page:

  • 50 kg of chicken: 1 kg seasoning + 5 litres of water + a thinly sliced lemon.
  • 25 kg: 500 g + 2.5 litres + a small sliced lemon.
  • 10 kg: 200 g + 1 litre + a small sliced lemon.

Marinate for 24 hours in the fridge and turn 3–4 times, then drain well and coat and fry as usual. Flatten the breasts to an even thickness first so they cook evenly.

7 zinger dishes for your menu

  • Zinger sandwich: a whole fried fillet in a bun with lettuce and sauce. For a consistent burger sauce, mayonnaise seasoning works at 5 g per 100 g of mayonnaise; add a small dose of chili extract powder for more heat.
  • Zinger rice bowl: sliced zinger over rice with sauce and salad — slice right after frying so the crust stays crisp.
  • Spicy strips: the same marinade on breast fingers; they fry faster, which helps at rush hour.
  • Spicy wings: great for sharing, served with ranch or burger sauce.
  • Zinger wrap: sliced zinger in a crêpe or tortilla with vegetables and sauce.
  • Family box: half zinger, half crispy — both are prepared the same way at the same ratio.
  • Buffet and catering trays: hotels and caterers serve spicy strips and wings; the 50 kg ratio makes big batches simple.

Mistakes to avoid

Cutting the marinating time leaves the flavour on the surface; coating wet pieces makes the crust fall off; uneven fillets dry at the thin end; and changing the sauce every day loses the taste customers come back for.
