Zinger vs crispy in one line

Zinger and crispy are both chicken breast pieces that are marinated, coated and fried until the crust is golden and crunchy. The main difference is taste: crispy is balanced with no heat, and zinger is the spicy version customers order for the kick.

For a restaurant owner there is more to it: each item has its own customers, its own sandwiches and its own place on the menu, which is why most chicken and fast-food shops serve both.

Who orders crispy and who orders zinger?

Crispy is the safe choice for families, kids, people who avoid heat, boxes and nuggets. Zinger customers are mostly young people who love a spicy bite, ordering it as a sandwich, a crepe or a meal with fries.

  • Crispy: meal pieces, crispy sandwich, strips, nuggets, kids' menu.
  • Zinger: zinger sandwich, zinger crepe, spicy strips, hot wings, zinger meals.

Is the marinade different?

Good news: Al Laith zinger seasoning and crispy seasoning are used the same way and at the same ratio; only the taste and heat change. Your chef learns one method, and adding a new item does not change your prep line.

  • 50 kg chicken: 1 kg seasoning + 5 L water + a thinly sliced lemon.
  • 25 kg chicken: 500 g seasoning + 2.5 L water + a small sliced lemon.
  • 10 kg chicken: 200 g seasoning + 1 L water + a small sliced lemon.

Marinate 24 hours in the fridge, turning 3–4 times, then drain well before coating so the crust stays crunchy.

Serving both from one prep line

  1. Estimate daily needs for each item from last week's sales.
  2. Marinate each item separately at the exact ratio, and label each container with the name and date.
  3. After 24 hours, drain and coat both with the same coating.
  4. Fry each item in turn and make sure the pieces are fully cooked inside.

Why a ready zinger seasoning beats adding chili by hand

Many shops make zinger by adding chili to the crispy marinade, so the heat changes from day to day and from chef to chef. A ready zinger seasoning gives the same heat and taste in every piece. For a hotter zinger sauce, add a small dose of chili extract powder to the mayonnaise instead of changing the marinade.
