Why the marinade matters more than the coating
Customers judge crispy chicken on two things: the crunch of the first bite and the taste of the meat inside. A great crust around a bland, dry fillet does not bring anyone back. If all the spice sits in the flour, the centre of the piece tastes of nothing.
How a water-based marinade works
Crispy seasoning dissolves in water with a thinly sliced lemon, and the chicken rests in it for 24 hours. Soaking meat in a salted liquid is a well-known kitchen technique that helps it hold its juices while frying and gives the flavour time to move into the meat rather than staying on the surface.
Ratios by batch size
- 50 kg chicken: 1 kg seasoning + 5 L water + a thinly sliced lemon.
- 25 kg chicken: 500 g seasoning + 2.5 L water + a small sliced lemon.
- 10 kg chicken: 200 g seasoning + 1 L water + a small sliced lemon.
Marinate for 24 hours and turn the pieces 3 to 4 times so every piece takes the same amount.
Where it goes on the menu
One marinade covers crispy pieces, strips, nuggets for kids' meals and crispy sandwiches, which keeps prep and stock simple.
Remove raw smell first
Many restaurants soak chicken in an off-flavor neutralizer solution first (boneless strips need only 10 minutes), rinse with filtered water, then marinate.
Mistakes to avoid
- Coating pieces while they are still dripping: drain well or the crust will not hold.
- Cutting the 24-hour marinating time short.
- Not turning the batch.
- Measuring with cups instead of a scale.
