What it is
Mayonnaise seasoning is a powder blend added to the mayonnaise you already use. One weighing and one mix give a house burger sauce that tastes the same every shift.
What it is used for
- Burger sauce
- Fries and meal dips
- Chicken sandwich sauce
- Delivery sauce cups
The ratio
Use 5 g of seasoning per 100 g of mayonnaise (50 g per 1 kg) and mix until smooth. So 2 kg of mayo takes 100 g, 5 kg takes 250 g, and 1 kg of seasoning covers 20 kg of mayonnaise. Your sauce cost is calculated by the gram.
Why restaurants prefer it
- The same taste on every shift, because it is weighed, not guessed.
- One step instead of several ingredients.
- A sauce customers link to your restaurant.
- Simple storage: a powder pack instead of cartons of ready sauce.
Common mistakes
- Measuring by eye: regular customers notice when the sauce changes. Use a scale.
- Mixing too quickly: mix until colour and texture are even, or some cups will taste strong and others flat.
- Making a week's sauce at once: prepare only what the day needs.
- Leaving the tub on the counter all shift: take out what you need and return the rest to the fridge.
Preparing and storing the sauce
Mayonnaise and mayonnaise-based sauces must be kept refrigerated. Make enough for the day, keep it chilled in closed containers and date each container. Fill delivery cups from chilled sauce before the rush.
To build a full sauce menu, add cheddar sauce powder for fries and burgers and ranch sauce powder for wing and nugget dips. Packs: 1 kg and 5 kg packs and 15 and 25 kg bags. Send us your monthly mayonnaise use on WhatsApp and request a quote.
