The rule: 40 g per kg
Use 40 g of Beef burger seasoning per kg of meat. It is pre-salted, so add no extra salt. The same dose works for pressed patties and smash burger balls.
Six steps
- Weigh the meat.
- Weigh the seasoning: 40 g per kg, on a scale.
- Keep the meat cold so the fat does not melt.
- Mix only until the seasoning is evenly spread.
- Shape patties or balls of the same weight.
- Cook on the grill or griddle.
Why not overwork the meat
Salt dissolves part of the meat protein into a sticky gel; the longer salted meat is worked, the firmer and more sausage-like the patty becomes. Mix until even, then stop.
Quantities
| Meat | Seasoning |
|---|---|
| 1 kg | 40 g |
| 5 kg | 200 g |
| 10 kg | 400 g |
| 25 kg | 1 kg |
Costing per patty is simple: if 1 kg of meat makes 8 patties of 125 g, each patty carries 5 g of seasoning.
Smash burgers
Mix the same 40 g per kg into the meat before rolling the balls, keep the balls cold until they hit the griddle, weigh them the same so they cook in the same time, and do not salt the griddle: the seasoning is already salted.
Keep the taste the same on every shift
- Hang a recipe card with "40 g per kg" and the table above next to the prep area.
- Use a small, accurate scale just for seasoning.
- Pre-weigh seasoning bags for your usual batch (400 g for 10 kg).
- Give one cook per shift responsibility for mixing.
Stored patties and the sauce
For patties prepared ahead, add Burger and kofta binder mix so they keep their juices. Finish the sandwich with burger sauce made from Mayonnaise seasoning: 5 g per 100 g mayonnaise.
