Why minced meat needs a binder
Minced meat releases water and fat when it heats, so patties shrink and dry, and kofta can crumble off the skewer. At home, cooks add breadcrumbs or bread soaked in milk (a panade): the starch absorbs liquid and holds it in the meat. That works for a home recipe of a kilo or two.
The difference in 5 points
1. A fixed dose: breadcrumbs and soaked bread change with the bread type and how much liquid it took. The burger & kofta binder mix has a written dose:
- 20% fat: 40 g binder + 5 g water per 1 kg meat.
- More fat: more binder.
- 30% fat: 50–55 g binder, no water.
- Chicken: if fat exceeds 20% of white meat, raise the binder accordingly.
2. Juiciness: the binder holds juices inside, so burgers shrink less and stay close to their raw size; the right binder can cut cooking loss by more than 10% (industry data).
3. Texture: a lot of breadcrumbs makes the patty bready; the small binder dose works on binding without changing the meat.
4. Kofta on the skewer: the binder keeps kofta firm on the skewer until it is cooked.
5. Speed: soaked bread needs preparation; the binder is weighed and kneaded straight in. Knead well before shaping.
A binder is not a seasoning
The binder works on texture; the taste comes from kofta seasoning or beef burger seasoning. Both go into the same mix and can be quoted together.
Kofta and kebab restaurants, burger and smash burger shops, hawawshi and meatball kitchens and restaurant chains use it. Packs: 1 kg and 5 kg packs and 15 and 25 kg bags, with delivery across Egypt. Ask for a quote on WhatsApp +20 127 178 8665.
