Smoked Kofta Without Charcoal for Cloud Kitchens and Mall Restaurants

Al Laith smoked kofta seasoning is a ready, salted mix that gives kofta and kebab the taste and aroma of charcoal grilling when cooked on a griddle, an electric grill or in the oven. It is made for cloud kitchens, mall restaurants and food courts where charcoal grills are not allowed.

Why cloud kitchens need it

Kofta is a delivery favourite and customers expect the charcoal taste, but many kitchens cannot run a charcoal grill. Smoked kofta seasoning brings that smoky grill taste through the seasoning itself, on whatever equipment you have.

Dose

  • 20–25 g per kg of meat, mixed well.
  • It is salted, so no extra salt is needed.
  • A 10 kg batch needs 200–250 g; a 1 kg pack seasons 40–50 kg of meat.

The dose is the same as our regular kofta seasoning, so branches with and without a charcoal grill can work the same way.

Cooking on a griddle or electric grill

  1. Mix the minced meat with the seasoning.
  2. Shape fingers of one fixed thickness; thin fingers cook faster and take the smoky taste on every side.
  3. Heat the griddle or grill well first so the kofta colours outside and stays tender inside.
  4. For trays, bake the shaped kofta in the oven.

Mistakes that spoil the smoky taste

  • Adding salt: the seasoning is already salted, and extra salt hides the grill taste.
  • A griddle that is not hot enough: the kofta stews in its juices instead of browning.
  • Fingers of different sizes: thick ones cook late, thin ones dry out, and customers notice.
  • Uneven mixing: some fingers taste smoky and others do not.

If kofta breaks up in delivery

Add burger and kofta binder mix: 5 g water + 40 g binder per kg at about 20% fat, or 50–55 g binder without water at 30% fat. More cloud kitchen products are on our cloud kitchens page.
