What is ras el abd made of?
Ras el abd is a small biscuit base topped with a fluffy white filling and coated in chocolate. The filling is essentially whipped egg white with sugar; many recipes pour a hot sugar syrup into the whites while whipping, and some add gelatin for extra hold. No egg white, no ras el abd.
That is where egg white powder helps: instead of cracking a hundred eggs a day and finding a use for the yolks, you weigh exactly what you need and reconstitute it with water.
Why egg white powder suits the filling
- No yolk: any yolk or fat stops whites from whipping; the powder is pure white.
- Consistent batches: you weigh it in grams, so the texture is the same every day.
- Easy storage: keep it dry, away from sunlight, no fridge before mixing.
- Clear costing: 1 kg of powder with 7 L of water gives 8 kg of liquid egg white.
How to use it
- Reconstitute: 1 kg powder + 7 L water (about 125 g + 875 ml for 1 kg of white). Stir gently and let it rest.
- Use a clean, dry, fat-free bowl and whisk.
- Whip until it starts to rise, then add sugar gradually, or pour hot syrup down the side of the bowl with the mixer running.
- Keep whipping until the mixture cools and turns glossy and thick.
- Pipe onto the biscuit bases and let it set before dipping in chocolate.
Common mistakes
Greasy bowls, adding all the sugar at once, pouring syrup onto the whisk and humid storage all spoil the filling. Keep the powder pack tightly closed because it absorbs moisture. For the biscuit base or a simple sponge, whole egg powder can replace fresh eggs.

Frequently asked questions
Can I make ras el abd with egg white powder instead of fresh eggs?
Yes. Reconstitute 1 kg of powder with 7 L of water and use it exactly like fresh egg white.
Why won't my ras el abd filling rise?
Usually fat in the bowl or whisk, or sugar added all at once. Use a clean, dry bowl and add sugar gradually.
How much does 1 kg of egg white powder make?
With 7 L of water it makes 8 kg of liquid egg white, roughly the whites of 240 to 265 eggs.
