Ordinary chili powder and its problems
Ground hot chili is familiar to every restaurant, but its heat changes with the variety, ripeness and growing conditions, and even peppers from the same plant differ. A new delivery can be hotter or milder than the last. You also need a noticeable amount to get clear heat, which changes the colour and texture of the sauce and can leave specks in garlic sauce or mayonnaise.
Chili extract powder: heat in a small dose
Chili extract powder is very concentrated: 5–6 g per 1 kg of product. For 1 kg garlic sauce, dissolve 5–6 g in a little water, add it and stir well. It is a fine powder that dissolves without specks, and the dose is so small that its effect on colour is limited.
Side by side
- Quantity: extract 5–6 g per kg; ground chili needs much more.
- Heat: the extract gives the same heat in every batch; ground chili varies.
- Colour and texture: the extract barely changes them; ground chili reddens the sauce and may leave specks.
- Storage: one kilo of extract covers a large volume of sauce.
When to use the extract
Spicy garlic sauce, spicy mayonnaise and hot sauce, wing sauces and spicy marinades (add it to zinger seasoning for a hotter level), chili sauce for koshari, harissa and spicy soups.
When ground chili still fits
When the dish needs visible red colour or a sprinkle on top. For red colour without extra heat, use paprika extract powder.
Switching a recipe
Do not swap gram for gram. Start at 5 g per kg, taste, go up to 6 g if needed, and write the dose on the recipe card. Use a dedicated scale or spoon so shifts do not mix up the dose. Packs: 1 kg and 5 kg packs and 15 and 25 kg bags, delivered across Egypt. Ask for a quote on WhatsApp.
Frequently asked questions
What is the difference between chili extract and chili powder?
The extract is very concentrated (5–6 g per kg of sauce) and gives the same heat every batch; ordinary chili powder needs more and its heat varies.
Can I replace chili powder with the extract gram for gram?
No. Start with 5 g per kg, taste, and go up to 6 g if needed.
Does chili extract change the sauce colour?
The dose is very small, so its effect on colour is limited and the texture stays the same.
