Spice Costing for Restaurants: Concentrated Extract vs Ground

Spices are a small line on the invoice, but prices swing and quality varies — and cardamom can be one of the most expensive items in the kitchen. Here is how to compare properly.

What is a powder spice extract?

A concentrated spice in fine powder form that delivers the same taste with less product, mixes evenly and leaves no specks in light sauces.

Replacement ratios

SpiceInstead ofUse
Cardamom100 g premium natural40–50 g extract
Black pepper100 g ground50–60 g extract
Clove100 g ground50–60 g extract
Paprika / smoked paprikaground paprikaabout 50% less
Nutmegground40–50% less

How to calculate

Compare the cost of the taste, not the price per kilo:

  1. Monthly ground-spice use × price per kg = current cost.
  2. Required extract quantity × extract price per kg = new cost.
  3. The difference is your monthly saving.

Example: a restaurant using 10 kg of ground cardamom a month needs only 4–5 kg of extract for the same taste.

Hidden savings

  • Less stock and less spoilage.
  • Same strength in every batch.
  • Cleaner-looking sauces.
  • No roasting, grinding or straining.

Tiny doses

Chili extract: 5–6 g per kg of product. Smoke extract: 5–6 g per kg of rice, 4–5 g per kg of grilled meat — real smoke taste without a smoker.

When ground still makes sense

Where visible specks are part of the look, combine both: extract for taste, a little ground spice for appearance.

Where each extract fits

  • Cardamom: basmati and mandi rice, broths, stews, desserts, Arabic coffee.
  • Black pepper: steaks, grills, soups, sauces and marinades.
  • Clove: broths, rice and meat marinades.
  • Paprika: vivid red colour for grills, potatoes and rice.
  • Smoked paprika: grilled taste and colour for BBQ and burgers.
  • Nutmeg: béchamel, mashed potato, meat fillings.

First-trial tip

Start at the low end of the ratio (for example 40% for cardamom), taste, and increase gradually until you match the taste your customers know. Record the final ratio on the recipe card.
