The difference
Ready sauce arrives finished in tubs. Cheddar sauce powder arrives dry, and you make only what the shift needs.
Point by point
- Storage: the powder keeps in a dry place without refrigeration until mixed; open tubs need the fridge.
- Waste: you make one shift's sauce, so no open tubs spoil.
- Space: 1 kg of powder makes about 3.5 kg of sauce.
- Texture: thick for burgers, thinner for nachos and fries with a little more hot milk.
- Consistency: the same ratio gives the same taste in every batch and branch.
- Time: ready sauce is instant; the powder needs a few minutes in the blender.
Mixing ratio
- Per 1 kg powder: 2.25 kg hot milk (about 65°C) + 0.25 kg milk powder.
- Blend until smooth; add hot milk for a thinner sauce.
- If it sets in the fridge, whisk in a little hot milk.
Cloud kitchens and chains
Online orders go up and down; with powder a quiet day does not mean binning an open tub, and a small kitchen saves fridge space (cloud kitchens). A chain needs the same cheddar burger in every branch: one recipe card, one ratio, one milk temperature (restaurant chains and catering). During service keep the sauce hot, above 60°C, in a warmer. For cheese fries, season with fries seasoning first, then add the cheddar.
Switching from ready sauce to powder
Start with a small batch at the same ratio and taste it next to the sauce you use now. Adjust the texture with a little hot milk until it matches what your guests know, write the final amount on the recipe card, and train every shift on the same steps so the taste stays the same whoever is cooking.
