مانع زفارة - Off-flavor neutralizer

Before you start

1. What does it do?

It removes the raw smell from chicken before marinating, so the marinade tastes clean and clear. That off-odor sits under the spices and shows more after cooking.

2. Is it for fish, liver or meat?

No. The off-flavor neutralizer is for chicken only: breasts, thighs, wings and whole birds.

3. Where does the smell come from?

Usually from blood, fat and skin residue and from the bits left inside the rib cage, and it gets worse when chicken is stored or thawed badly. Clean those areas first.

Ratio and soaking time

  • 1 kg with 10–12 L water, enough for 50 kg chicken.
  • Bone-in chicken: 1 hour, stirring twice.
  • Boneless chicken: 10 minutes maximum, stirring.
  • Never leave it overnight; the marinade is what rests with the chicken in the fridge.

After soaking

Rinse well with filtered water so the spices stick properly, then marinate as usual with broasted seasoning or chicken shawarma seasoning. It does not change the marinade's taste; it makes it clearer, so you don't need extra spice to cover a smell.

Special cases

Frozen chicken: thaw it in the fridge, not on the counter, because chicken thawed at room temperature sits in the range where bacteria multiply. Then soak with the same ratio and time.

Before boiling: soak, rinse, then boil and season as usual.

Several branches: write the ratio and times on a card in every kitchen and weigh the powder, so every branch works with the same number.

Packs: 1 kg and 5 kg packs and 15 and 25 kg bags, delivered to all governorates. Send your daily chicken quantity on WhatsApp for a quote.
