The right method first
- Mix 1 kg off-flavor neutralizer with 10–12 L water, enough for 50 kg chicken.
- Bone-in chicken: soak 1 hour, stirring twice.
- Boneless chicken: 10 minutes maximum, stirring.
- Rinse with filtered water, then marinate.
1. Wrong water ratio
Diluting beyond 10–12 L per kilo, or stretching one kilo over more than 50 kg chicken, gives each piece less. Write the ratio on a card by the soaking tank.
2. One soaking time for everything
Bone-in pieces and whole birds need the full hour; boneless breast and fillet 10 minutes at most. Stick to the times.
3. No stirring
In a big tank, pieces at the bottom or stuck together miss the solution. Stir twice during the hour, and during the 10 minutes for boneless chicken.
4. Marinating without rinsing
Rinse well with filtered water before marinating so the seasoning sticks properly, whether it is broasted seasoning or shawarma.
5. Thawing on the counter
Frozen chicken left on the counter warms on the surface long before the inside thaws, which is unsafe and makes the smell heavier. Thaw in the fridge, then soak for an hour, rinse and marinate.
6. Leaving the causes in the chicken
Off-odor mostly comes from blood, fat and skin residue and from bits left inside the ribs such as lungs and kidneys. Clean those first, then soak: cleaning and soaking are two steps, not one.
7. Using it on anything but chicken
It is for chicken only: breasts, thighs, wings and whole birds before broasted, shawarma, rotisserie, charcoal or boiling. Not for fish, liver, meat, tripe or kidneys.
Packs: 1 kg and 5 kg packs and 15 and 25 kg bags, delivered across Egypt. Send the amount of chicken you prepare daily on WhatsApp for a quote.
Frequently asked questions
I used the off-flavor neutralizer and the smell is still there. Why?
Usually a wrong water ratio, too short a soak for bone-in chicken, no stirring, or blood and bits inside the ribs not cleaned first. Use 1 kg in 10–12 L water per 50 kg, soak 1 hour stirring twice, then rinse.
How long should boneless chicken soak?
10 minutes maximum, stirring.
Is it for fish or liver?
No, it is for chicken only.
