What is kojak, and what does egg white do in it?
Kojak is a name used for light, airy sweets made from meringue (egg white whipped with sugar), often coloured or chocolate-coated and sold for children and in seasons such as Mawlid. It is often mentioned alongside ras el abd because both rely on the same white foam.
Egg white powder is the base: it traps the air that makes the sweet light and sets with the sugar so it keeps its shape.
Questions pastry chefs ask
Does it whip like fresh white? Yes, once reconstituted, in a clean, dry, fat-free bowl.
How do I reconstitute it? 1 kg powder + 7 L water = 8 kg liquid white (about 125 g + 875 ml for 1 kg). Stir gently and let it rest.
When do I add sugar? Gradually, once the whites start to rise; pour hot syrup down the side of the bowl, not onto the whisk.
When is it ready? When it is glossy, thick, holds a standing peak and feels smooth between your fingers.
Can I colour it? Yes, add food colours in small amounts at the end of whipping; oily colours can knock the foam down, so use colours made for confectionery.
Planning a batch in the shop
Reconstitute only the white you need for the day, prepare trays, piping bags and colours before you start whipping so the meringue never waits, whip in batches you can shape quickly, then pack the finished sweets in closed boxes away from humidity and date every box.
Common problems
- Foam collapsing: under-whipping or sugar added too fast.
- Sticky sweets: humidity, so store in closed boxes.
- Whites not rising: fat in the bowl; the powder contains no yolk.
- Different results each day: weighing powder in grams keeps batches consistent.
For biscuit bases or cakes, whole egg powder replaces fresh eggs.

Frequently asked questions
Can I make kojak with egg white powder?
Yes. Reconstitute 1 kg with 7 L of water and whip it with sugar exactly like fresh white.
Why does my meringue collapse?
Usually sugar added too fast, under-whipping or fat in the bowl. Add sugar gradually and whip until glossy and thick.
Are kojak and ras el abd made with the same egg white?
Yes, both rely on egg white whipped with sugar, so egg white powder works for both.
