How much is a kilo of cardamom extract powder at Al Laith?

A kilo of cardamom extract powder at Al Laith is EGP 1,490 per kg, before sales tax. It comes in 1 kg and 5 kg packs and 15 and 25 kg bags. Delivery is free inside Cairo; other governorates pay the courier's fee, which we tell you when you order. Every other price is on the Al Laith price list.

Why does the extract cost more per kilo than whole cardamom?

Short answer: you use 40–50% less of it, so one kilo of extract is compared with about two kilos of cardamom, not one. The aroma of cardamom sits in the essential oil inside the seeds; the green husk adds little. The extract is made from real cardamom oil, so you pay for the aroma, not the husk.

  • At 60 g extract per 100 g cardamom, one kilo replaces about 1.66 kg of premium natural cardamom.
  • At 50 g, one kilo replaces 2 kg.
  • A 5 kg pack replaces 8.3–10 kg of natural cardamom.
  • A 25 kg bag replaces 41–50 kg, a central-kitchen quantity.

How do I compare it with the cardamom price I pay?

  1. Write down today's price per kilo of the whole cardamom you buy.
  2. Multiply it by 1.66 (using 60 g of extract per 100 g) or by 2 (using 50 g).
  3. If the result is higher than the extract price above, the extract is cheaper for your restaurant.
  4. Add the husks picked out of the rice and the chef's time: the extract is a ready powder with no husk.

Which dishes is it for?

It is for food that is cooked and simmered, where heat and fat spread the aroma: mandi, kabsa and Bukhari rice, meat broths and stews, soups in hotel buffets, and oriental sweets. Add it to the broth or rice water before boiling. It is not for coffee: cardamom oil does not dissolve in water and floats in a small cup.

Need clove too for Bukhari rice or meat broth? Add clove extract powder to the same order; its price is on the price list.
