Why does a sujuk skewer melt?

Sujuk is naturally high in fat. When that fat melts under the grill and the binding is weak, the skewer loses its shape. The answer is not less fat but binding matched to your fat level, which is what sujuk shawarma binder mix does.

1. Weak binding with high fat

Use the base dose: 5 g water + 40 g binder per kg of minced meat, for fat at 20% or less.

2. A dose not matched to fat

If fat is above 20%, add more binder. Example: 30% fat → 50 g binder per kg with no water. Know your fat level first.

3. Too much water in a fatty mix

4. Confusing binder and seasoning

The binder holds juices and fat; sujuk shawarma seasoning gives the sujuk taste. Use both for a firm skewer with a steady taste.

5. Dry slices that crumble

When juices escape, the outer slices dry out and crumble. Holding the juice inside keeps the sujuk tender and the slices clean, even with high fat.

Quick checklist

  1. Check the fat level of the minced sujuk.
  2. Pick the dose from the table.
  3. Mix binder and seasoning evenly through the meat.
  4. Record the dose that works so every shift follows it.

The binder also works in sujuk sandwiches and minced sujuk pizza topping. Packs: 1 kg and 5 kg packs and 15 and 25 kg bags, delivered to every governorate; send your weekly quantity on WhatsApp for a quote.
