What smoked paprika is
Smoked paprika is made from red peppers dried and smoked over oak wood and then ground, which gives it its grilled aroma alongside the red colour. It comes sweet, bittersweet and hot, and is known in Spanish paella and chorizo, dry rubs for grilled meat and barbecue sauce.
Smoked paprika extract from Al Laith combines a smoky grilled taste and red colour, and because it is concentrated you use 50% less than ground paprika.
Dishes it is used in
- Grills and chicken on gas grills or in ovens: add it to the dry rub or the oil before grilling.
- Burgers: a smoky touch in the patty mix for griddle kitchens.
- BBQ sauce: as a fine powder it adds smoke without thinning the sauce like liquid smoke; mix it with the dry ingredients first.
- Rice: a smoky side for grill plates.
- Potatoes: fries, wedges or baked potatoes, as in Spanish patatas bravas.
How much to use
Use about half your usual ground paprika amount, then adjust to taste. Test a small batch, record the grams and write them into the standard recipe.
Pairing it with other products
- For stronger smoke without colour, add a little smoke extract powder (4–5 g per kg of grilled meat, 5–6 g per kg of rice).
- For colour without smoke, use paprika extract powder.
- For BBQ mayo, barbecue sauce powder at 75 g per 1 kg of mayonnaise.
It suits burger and smokehouse restaurants, grill kitchens, cloud kitchens without grilling equipment and hotel buffets. Available in 1 kg and 5 kg packs and 15 and 25 kg bags, delivered across Egypt.
