Where the smell comes from
In fish, a compound in the flesh has no smell, but after the catch bacteria break it down into trimethylamine, which smells strongly. Trimethylamine is basic, so an acid such as lemon juice or vinegar reacts with it and reduces the smell. That is why vinegar and lemon are the classic home fix.
Why vinegar and lemon are hard to scale
- Amounts are guessed, so results change between shifts.
- Lemons differ in juice and acidity.
- Too much leaves a sour note under the marinade.
- Squeezing lemons for 50 kg of chicken takes real labour.
The off-flavor neutralizer method
- Mix 1 kg Off-flavor neutralizer with 10–12 L water: enough for 50 kg chicken or meat.
- Soak 1 hour, stirring twice.
- Rinse with filtered water, then marinate.
- Boneless chicken: 10 minutes maximum, stirring.

When each one fits
A small kitchen preparing a few kilos a day, or a fish dish where lemon is part of the flavour, can keep the traditional way, as long as the amount is written down. Broasted and fried-chicken shops (before Broasted seasoning), shawarma shops, liver and sausage restaurants, seafood restaurants and central kitchens that need the same result every day are where the neutralizer pays off. If your problem is chicken flavour fading after cooking or in delivery, that is a different issue: see Chicken flavor stabilizer.

Frequently asked questions
Can I use the off-flavor neutralizer with vinegar or lemon?
Use it on its own as a soak (1 kg + 10–12 L water per 50 kg), rinse with filtered water, then add lemon in the marinade if your recipe uses it.
Why do vinegar and lemon reduce fishy smell?
The smelly compound in fish is basic, and the acid reacts with it. In a restaurant the problem is that the amount and acidity vary each time.
Does the neutralizer change the marinade taste?
No. You rinse with filtered water after soaking and marinate as usual, so the marinade tastes cleaner.
