How traditional demi-glace is made
Demi-glace is a French brown sauce derived from sauce espagnole, one of the mother sauces. It starts with a brown stock of roasted beef or veal bones, with tomato, aromatic vegetables and herbs, simmered on low heat for as long as 24 hours while the fat is skimmed and water added. The stock is strained and reduced by about half. The taste is deep, but it costs a full day of work, hours of fire, a skilled chef and fridge space.
How ready demi-glace powder is made
- 100 g demi-glace sauce powder per 1 L water.
- Dissolve in cold water first, then heat, so it does not lump.
- Boil 10 minutes, stirring constantly.
- Optional: 40–50 g tomato paste and 10–15 g mustard while cooking.
One kilo makes about 10 L of sauce; a 5 kg pack about 50 L.
Side by side
- Time: up to a day plus reduction, versus 10 minutes.
- Consistency: traditional varies with bones, chef and reduction; the powder gives the same taste and texture every batch.
- Storage: stock must be refrigerated; the powder keeps long and you prepare one shift at a time, so less waste.
- Skill: anyone on the shift can follow the ratio.
When each makes sense
Traditional fits a kitchen that already makes bone stock daily, with a small menu built on one signature steak. Ready demi-glace wins in busy steak and grill restaurants, hotel buffets where the sauce sits in a warmer for the whole meal, caterers serving meat dishes at events, and chains that need one taste in every branch.
A base for other sauces
For mushroom sauce, sauté mushrooms in butter and add the prepared demi-glace. For pepper sauce, add black pepper extract at the dose on its page. It also goes over escalope, roast beef and grilled liver, and into meat stews instead of plain stock.
