Why meat shawarma needs a fixed method
Meat shawarma brings customers back: a sandwich in flatbread, an Arabic shawarma plate with fries and garlic sauce, or a shawarma fatteh over toasted bread. A customer who liked it today expects the same taste tomorrow. When every chef seasons by eye, the taste drifts from shift to shift.
So a restaurant's meat shawarma method should be written and weighed: the meat, the cut, the wet marinade and the grams of seasoning per kilo. This guide walks through it step by step.
How shawarma is made
Shawarma is thin slices of marinated meat stacked on a vertical spit that turns in front of the heat; the cooked outer layer is shaved off and served. Some restaurants add thin layers of fat between the slices to keep the cone moist. Doner is a different style made from minced meat shaped on the spit; see our doner guide for that.
Step by step
- Choose the meat: the seasoning works for beef and lamb at the same rate. Keep to one meat so the taste stays the same.
- Slice thinly and evenly so the marinade penetrates and the cone cooks evenly.
- Make your usual wet marinade — oil, vinegar, onion and lemon, or yoghurt.
- Weigh the seasoning: add 23–25 g of Al Laith meat shawarma seasoning per kg of meat and mix until every slice is coated.
- Marinate in the fridge, covered, never at room temperature.
- Build the cone tightly, spreading any fat layers evenly.
- Cook and shave only the layer that is done.
Quantities
- 10 kg sliced meat: 230–250 g seasoning.
- 25 kg sliced meat: 575–625 g seasoning.
- A 1 kg bag seasons about 40–43 kg of sliced meat.
- Minced doner: 18–20 g/kg, so 1 kg covers about 50–55 kg.
Mistakes to avoid
- Seasoning by eye.
- Thick or uneven slices that stay raw inside.
- Marinating outside the fridge, or reusing marinade that touched raw meat as a sauce.
- Shaving a layer that is not fully cooked.
Dishes from one cone
Sandwiches with garlic sauce and pickles, Arabic shawarma plates, shawarma fatteh, and hotel buffet or catering shawarma. Many shops make a stable garlic sauce with egg yolk powder, and doner shops add the meat shawarma binder mix.
